For a quick and easy weeknight meal, try margherita pizzas. They take only a few minutes, they’re healthy and kids love them!
4 Whole wheat pitas
20 Cherry tomatoes, sliced
1 Handful of basil, torn
1/2 Cup of pizza sauce
8oz of shredded mozzarella cheese
Preheat oven to 400 degrees. On the whole wheat pitas, layer sauce, cheese tomato slices and basil leaves. Place the pitas on a baking sheet and bake for 10 minutes or until the cheese has melted and turned golden brown. Serve one pita per person, slicing into four equal quarter slices.
